• 4-5 medium carrots, peeled and grated
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 teaspoons honey
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste
  • Chopped fresh parsley or cilantro for garnish (optional)


  1. In a large mixing bowl, combine grated carrots, mayonnaise, Dijon mustard, honey, apple cider vinegar, salt, and pepper.
  2. Mix until well combined.
  3. Taste and adjust seasoning as needed.
  4. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  5. Before serving, garnish with chopped fresh parsley or cilantro if desired.
