Ingredients:
- 4-5 medium carrots, peeled and grated
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 2 teaspoons honey
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
- Chopped fresh parsley or cilantro for garnish (optional)
Instructions:
- In a large mixing bowl, combine grated carrots, mayonnaise, Dijon mustard, honey, apple cider vinegar, salt, and pepper.
- Mix until well combined.
- Taste and adjust seasoning as needed.
